feeling a little lunchy tests out the blogosphere

I'm Feeling A Little Lunchy, over at www.facebook.com/feelingalittlelunchy. I've been turned on to making fun and simple lunches a regular part of my two daughters childhood.  I've done it for years, but more recently I've discovered that I'm not the only one who enjoys doing this.  I am a baby blogger, but I sure do love my Facebook and Instagram these days.  I am so honored that the www.bentobloggersandfriends.blogspot.com would consider me a part of their group...their meals and blogs give a new meaning to the word "AWESOMESAUCE!"


I got my EasyLunchBoxes Mini Dippers in last night and I was so sad that I had already packed lunches.  I've got a major issue with procrastination, so kudos to myself for getting that done before the mail came.  I had to wait an impossibly long 24 hours to make lunch again...I almost didn't make it.  I tried to escape my job at Starbucks by going out with the trash, but they discovered me.


So on with the lunch...that's why you're here, right? Apparently I have a bit of fall fever.  Down here in Georgia, we've had a taste of fall with lows in the sixties, but by afternoon, it's up in the eighties.  Oh well. Here's my toast to the cooler weather...keep it coming, Mother Nature!

 I made some pumpkin spice pudding for the mini dippers, Pepperidge Farm Pumpkin Swirled Bread with cream cheese roll ups, grapes, a clementine from our seemingly multiplying supply of clementines, and some apple straws.  If you haven't had those...they're so good and you can eat like forty of them for 130 calories.  FORTY! 




Anyone who hasn't done a sandwich bread roll up, don't be intimidated!  It's so simple. I can't recall where I saw it, but I think it was www.momables.com  Two slices of bread, a rolling pin and some filling.  You simply flatten out each piece of bread separately after cutting the crusts off.  Then you lay them end to end, overlap the two pieces that meet in the middle a little bit and then give the whole thing another roll over.  That seals them together.  Then spread on your filling...sticky ones like peanut butter or cream cheese work best.  Roll it up and slicey slicey! Voila! Fancified sammiches!

We've lost a lunch bag recently, and I've got a load of dishes that would put any stereotypical 1950's diner to shame, so I made one lunch in the ELB and one in our Leaflet Tight box (without the inserts) and babyzing.etsy.com reusable cloth snack bags.  It's my goal each lunch to not use any trash...for the most part, it works.  Love the options we have available to us now.  I can't sew...nor do I really want to learn.  Sadly, I have two sewing machines and nearly threw one out the window the last time I attempted something.  I tried to sew napkins...they're square.  I failed.
